Chocolate cheesecake recipe by King Authur baking

 Chocolate cheesecake recipe  by King Arthur baking


Ingredients

Crust

  • 24  Oreo cookies with vanilla.
  • 1/4 cup confectioners' sugar
  • 4 tablespoons butter, melted

Filling

  • 1/2 cup  milk
  • 2 cups (340g) semisweet giradhelli chocolate chips
  • 1 teaspoon coffee powder
  • Three 8-oz packages (680g) cream cheese, room temperature
  • 1 cup sugar
  • 4 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 2 tablespoons King Arthur Unbleached All-Purpose Flour

Instructions

  1. Preheat the oven to 375°F. Lightly grease a 9" springform pan.

  2. To make the crust: Grind the cookies together with the sugar.

  3. Add the melted butter, processing briefly or stirring until the mixture is evenly crumbly. Press the moist crumbs into the bottom of the prepared pan. 

  4. Bake the crust for 5-6 minutes. Remove it from the oven, and set it aside as you make the filling. The key is once you smell the cookie flavor that when you are done with baking your cookies.

  5. Reduce the oven heat to 350°F.

  6. To make the filling: 

    Combine the milk and chocolate chips in a bowl. Heat, stirring frequently, until the chips melt and the mixture is smooth. Remove from the heat, add in the espresso powder, and set the mixture aside.

  7. In a large mixing bowl, beat together the cream cheese and sugar at low speed, until thoroughly combined. Scrape the bottom and sides of the bowl, and beat briefly, just until smooth.

  8. Add the eggs one at a time, beating to combine after each one.

  9. Stir in the vanilla, then the flour.

  10. Add the chocolate/milk mixture, beating slowly until thoroughly combined. Scrape the bottom and sides of the bowl; beat briefly, just until smooth.

  11. Pour the batter on the crust pan. 

  12. Bake the cake 50 minutes, until a toothpick inserted into the cake 1" from the outside edge comes out clean. The center may not look set; that's OK.

  13. Turn off the oven, crack the door open several inches, and allow the cake to cool in the oven for 1 hour. Remove the cake from the oven, and set it on a rack to finish cooling. When it's completely cool, cover the cake, and refrigerate it until ready to serve.

  14. Garnish the cake with the reserved crumbs. Serve it in small slices, with whipped cream .













Stuffed Shell pasta

Last thanksgiving I learned a new dish. It came out really good. Sharing this recipe with you.


Ingredients:
Big shells - 1 box
Marinara sauce - 2 bottle (I use Kirkland brand)
Zucchini - 3 nos
Broccoli - 1 cup
Bell peppers - 4 colors(red, yellow,green and orange)
Yellow squash - 2 nos
Garlic - 5 pods
Olive oil - 2 tbs
Italian seasoning - 1 tsp
Ricotta cheese 8 oz
Mozzarella cheese - shredded 8 oz 


Take a big pan add crushed garlic and chopped Onions. Once onion is cooked then add vegetables and  Italian seasoning, salt and pepper.

Once cooked ,  put it aside.  boil the shell pasta and once cooked, put it in the cold water.

Mix the vegetables and ricotta cheese stuff them in the shells. 

Take a deep brownie pan and spread a bottle of marinara sauce and then place the stuffed shells and put  the mozzarella on top of it and bake it for 15- 20 min at 375.  Once cheese is melted, then broil high for the cheese to melt. once cheese melts it is ready to serve.

Pineapple Rava Kesari

Ingredients: Rava or Semolina - 1 cup 
Pineapple - 1/2 cup chopped pieces 
Sugar - 2 cups 
Water - 3 cups 
Ghee - 1/2 cup 
Cashew nuts - 12 
Orange food colour - a pinch 
Raisins - 15 
Cardamom - 4 pods powdered. 
 
In a thick bottom pan, add a tablespoon of ghee and fry the split cashews and transfer to a small dish. Then, add one more tablespoon of ghee and roast the rava in medium flame, till it turns light brown in colour and keep it aside. Pour three cups of water in the same pan and add the food colour. Once the water has come to a boil, simmer the heat to the lowest. Then, add the roasted rava and the pineapple pieces slowly, stirring it continuously so as to not form lumps. When there are no lumps in the mix, close with a lid and keep for two minutes and allow the rava and the pineapple to cook well in water. Open the lid and check if it is cooked. Then, add sugar and keep stirring. When the sugar is absorbed well and the kesari becomes thick, add the remaining ghee, little at a time and keep stirring. Kesari is done when it leaves the pan. Garnish with Cashewnuts, raisins (I like to add it without frying in ghee) and cardamom powder.
An easy and tasty sweet to prepare within 15 minutes. The pineapple added to it gives out a special taste.

Authentic street side Pav Baji

 

This is, by far the best pav bhaji recipe and is a super duper hit all the time.

Ingredients:

Boiled potatoes  - 5 

Onions - 2

Cilantro

Bell pepper - 1 count

MDH Pav baji masala - 1tsp

Turmeric - 1/8 tsp

Ginger and garlic paste - 1 tsp

Tomatoes - 3 nos

Butter 2 tbsp

In a pan, add a  tsp oil and a tbsp butter . Add ginger and garlic paste. Once done add onions. Then add turmeric and let onions gets cooked. Next add chopped bell peppers and tomatoes and let it cook. Finally add pan baji masala and salt. Once oil oozes out,  add the potatoes and mash it. Please add a cup of water. It should semi- solid. Let it cook.  In another pan, add red chili, lemon juice and add it in the baji. Add the test of the butter and little sugar. Enjoy your side with Pav buns and when you serve the baji add lemon and chopped onions on the top. YUM YUM!!!!


Indian style Pizza

A long hiatus indeed due to new arrivals in the family .  Corona and work from home has created a need to satisfy the family with restaurant style food. 

I prepared Indian style desi flavoured pizza for my kids. They loved it.


Ingredients 


All purpose flour - 4 cups
Sugar - 1 Tsp
Instant dry yeast - 1 envelope 
Salt - 2 Tsp
1 1/2 cups of water (110 degrees F)
Oil - 2 Tbsp


In a mixer bowl, combine flour, sugar, yeast, salt, oil and water. Mix well.


Grease a glass bowl with 2 tsp of olive oil and place the dough in the bowl. Cover it with a cloth and place it in the oven. Oven should be warm enough and this will help the dough to raise. Keep the oven light on throughout this process. Let it double in size, in one hour.

Pizza dough 
1/2 cup yogurt
1/2 Tsp turmeric
1/2 Tsp cumin and coriander powder - Depending on the spice level
1/2 Tsp garam masala
1/4 Tsp red chili (Kashmiri powder)
1/2 Tsp ginger and garlic paste
1/4 Tsp salt
1/4 Tsp lemon juice

Vegetables (chopped into small pieces)
Bell peppers - 3 colors chopped 
Pineapple - 1/4 cup 
Onion - 1 
Paneer 1 small box (8 OZ)
Oil - 1tsp
Kasuri methi - 1 tsp


Take a big glass bowl add yogurt then ginger garlic paste, coriander, cumin powder, turmeric powder, red chili, lemon and garam masala and salt. Mix them. Once mixed add all the vegetables. Mix them together in the bowl and cover and keep it in refrigerator for 2 hours. Once done take the dough split it in to two and half and roll the dough and place it on the pizza pan. Spread the pizza sauce and then put the marinated vegetables on the dough and add mozzarella cheese and place it in the oven for 400 degrees F for 15- 20 min.

Enjoy your yummy pizza!!!!

Valentine Special-Lemon raisin cup cake with lemon cream cheese frosting


Sincere apologies for the long slumber. Anyways, making it up by posting this awesome cup cake recipe of my younger daughter who made this for her valentine :):)

The below quantity of ingredients would yield 40 to 45 cup cakes.

Ingredients for the cup cake:

All purpose flour -1 1/4 cups
Self-raising flour - 1 1/2 cups
Eggs - 4 (at room temperature)
Unsalted butter - 2 sticks (at room temperature)
Sugar - 2 cups
Vanilla extract- 1 tsp
Milk - 1 cup
Lemon juice - (1 lemon)
Lemon zest - (2 lemons)


Ingredients for the frosting:

Creamcheese - 4 ounces
Butter - 2 tbsp
Icing sugar - 2 cups
Lemon juice ( 1 lemon)
Lemon zest (1 lemon)
Pre-heat oven to 350 deg.

Line muffin pan with cup cake liners.

In a bowl, combine the flours and set aside.

In another bowl, cream the butter until smooth. Add the sugar gradually and beat until soft and fluffy. Now, keep adding eggs one by one, beating well after each addition. Now, add the flour mixture in three parts alternating with milk. Do not over beat. Add the vanilla extract and mix well. Add the lime juice and the lime zest. Once the ingredients are blended, carefully spoon about 3/4th of the cup cake liners. Bake for 20 to 25 minutes.

Cool the cup cakes well before starting the icing process. Even if a little heat is there, the icing would not set and will begin to melt. Hence, complete cooling of the cake is necessary.

For the frosting:

Beat the cream cheese and butter until light and fluffy.  Add the lemon juice, zest of lemon, sugar and beat it again.

Please note that the above ingredients should be at room temperature.

Verdict: Awesome, awesome and just awesome !!!!!!!!!!!!!!!!!! A true feast to the eyes and the tummy :):)

Yummylicious Crumbly Blue berry muffins

These muffins are so colorful and my family loves them. Posting a beautiful and a simple blue berry muffin recipe. (Courtesy - Allrecipes.com but made some tweaks to the recipe to suit my taste)

Ingredients:

All purpose flour - 1 1/2 cups
Sugar - 1 cup
Baking powder - 2 tsp
Vegetable oil - 1/3 cup
Salt - 1/2 tsp
Egg - 1 nos
Milk - 1/3 cup
Vanilla Essence - 1/2 tsp
Fresh blueberries - 1 cup

For the crumb topping:

Sugar - 1/2 cup
All purpose flour - 1/3 cup
Butter - 1/4 cup
Ground cinnamon - 1 1/2 tsp


Preheat the oven to 375 deg F
Preparation of Muffins: Mix the flour,sugar and baking powder. Pour the vegetable oil to a measuring container which can hold one cup quantity. To this add the egg, vanilla essence, and the milk till it measures one full cup. Combine this to the flour sugar mixture. Fold in the blueberries. Grease the muffin tray and fill to 3/4th of the height to leave some space for the crumbs and also for the muffin to rise.

Preparation of Crumb topping: Mix together 1/2 cup of sugar, 1/3 cup of all purpose flour, 1/4 cup of butter and 1 1/2 tsp of ground cinnamon and sprinkle this mixture over the muffins before baking.

The baking takes 25-30 minutes until the crust is nice and golden brown. Loved the extra overflowed crust which is very evident in the pic.

Those were the days .............What are we missing now???

Many of us who grew up during the  70's 80's and even the 90's would concur  with my  viewpoints.

When I was young, we never had computers, televisions or video games.  All that we had were friends and more friends who were in no dearth and would collect in a place for their daily quota of play.

There were no gender bias. All can participate in any game according to their tastes or form the cheer squad.  The schools did not run in shifts as they do today.  So, almost all the schools used to get over by 4 in the evening and we used to assemble for the daily show at 5 pm prompt.  After the exchange of the daily news and views, the game of the day begins.

It usually begins with a warm up of just running across the length of the streets (mind you, there was not much traffic in the sub-streets).  The game selection depends on the season too.  Be it cricket, Gilli-danda, Pambaram or the top, Hide and seek, 7 stones, Pallankuzhi, Snakes &  Ladders, Ludo, Carrom board, Making boats during monsoon etc etc. The list is endless.

We had to very very careful during the play of some games like "Gilli danda" and cricket as we have broken many a panes and reprimanded severely sometimes.  Teams for cricket are divided according to the capacity of each player.  Three sticks would serve as stumps and a carved bat of wood with tennis ball would complete the cricket kit. 

"Pambaram" or the "Spin Top" was one of my favourite and those lovely colorful tops of wood bought from the Corner shop used to be real fun. The top comes with a long thread which is wound on the grooves  and then pulled with a jerk and tossed on  the ground.  The top keeps spinning for a long time and the one which does for a long time emerges a clear winner.  Again, we used to spin the tops in the middle of our palm too. 

During the game of Hide and Seek we can see the most of the girls hiding behind the huge trees or behind the compound wall but the boys invariably will be on the tree top hiding behind the lush green branches or sometimes on the house top.  Making boats out of newspapers and making them float on the channelised rain water on either side of the streets is fun. 

Snakes and Ladders used to be a favourite during the Vaikuntha Ekadasi day when the local daily  used to give a free supplement of the game alongwith the paper.  We used to be awake the whole night playing and visit the nearby temple's 'Sorga vaasal' (Gate to Heaven)  the next morning. The spirit and the excitement were abundant.

The games used to extend till the daylight fades and each one gets a call from their mothers to get inside the house.  The end of play is mostly determined by the switching on of street lights.  Although we used to play for long hours, still we used to sulk while returning back home and would not disperse till we decide the game plan for the next day.

Once home, after a quick bath, still there was enough time to do our daily studies before a sumptuous simple home cooked dinner.  

Its a pity to see young children running around to tuition classes, filled with heavy homework sessions , project works etc., thus finding very little time left to play.  If at all, time is available, can see them either with their parents mobile,  playing games or sitting in front of the television.  No doubt, competition has become multi fold nowadays, but still the childhood should not be lost.  

Half hour of outdoor play will clear the stress and anxiety in a child developed during the day.    The child will be able to focus more and of course stay healthy too.  

Hence, the debate continues whether Technology and its advancement is a Boon or a Bane

Cream of Vegetable Soup


Recipe

All purpose flour: 1tbsp
Butter: 1/4 stick
Onion (diced): 1
Garlic: 1 clove
Beans (diced): a big cup
Carrots (diced): 2
Cauliflower( diced): 1/2
Milk: 3 cups
Pepper
Salt

This is a great recipe when you are down with a cough or cold or even otherwise. Super simple but very delicious.



In a big sauce pan, melt some butter but don't let it brown. Add the flour and cook for a min or two in low heat, make sure the raw smell disappears,  but be careful not to burn it. In a separate pan, add little butter and saute the onions till it is translucent. add the carrots, beans and cauliflower and cook it. smash it lightly and add it to the butter and all purpose flour mixture. Add milk, salt and bring it to a boil, the mixture will thicken and get to a creamy texture. Sprinkle some pepper and serve hot with some sour dough bread.

Goodness of Methi seeds




Most of us would be aware that methi seeds are boon to mankind especially to diabetic people.  A spoon of methi soaked in water the previous night and taken as a first intake the next morning would do wonders to blood sugar.  If taken dedicatedly, result can be seen within a few weeks.

I have been sprouting methi for quite sometime. Along with my usual salad, I mix a tablespoon of methi sprout which makes my salad double healthy.





Wash methi seeds well and soak them for 9-10 hours.  Drain and keep the seeds in a colander and let the excess water drip out.  This will take anywhere between half to an hour,  depending on where you place the colander. If it is placed close the window, the water dries up quickly. Take the moist methi seeds in a big square cloth ( I use handkerchief) and tie it well - well covered on all sides and keep it in a corner. After 24-36 hours, sprouts can be seen and you can decide  the length of the sprout.

It is a very simple process and can be stored in air tight dabbas in the fridge for daily use.  Stays fresh for a week.

Yummy healthy meal - Cucumber, carrot, apple, soaked black chenna, soaked kabuki chenna, methi sprouts and green gram sprouts.



I would be content if at least one of my friend reads this and makes sprouts at home for consumption in general, not only diabetics.

A cup of piping hot coffee in chennai even during peak summer 🙄🙄😜😜are you kidding?.

Born and brought up in Mylapore, Chennai, a hot cup of filter coffee is an integral part of our daily life.    My mother prepares the excellent coffee with the first thick decoction from the traditional coffee filter.  Everything is prepared fresh in the morning. The first aroma of the boiling water getting mixed with the coffee powder in the coffee filter  is divine and can be smelt a couple of houses away.    Fresh milk (not Aavin) used to be brought to the door step by the milk man as early as 5 a.m. Hence, the first coffee of the morning is so special with fresh milk and fresh decoction.  Later, during the day, it gets diluted and depends on visitors too 😜😜.

Once in three days, coffee powder is bought from Narasus who freshly grind 'Pea berry and Plantation 'A' in certain proportions as desired by customers.  The proportion of these berries are very important to get the authentic rich flavor.  Sometimes a little chicory is added to give thickness.  Not to forget  those days, when we used to buy raw coffee beans, roast in Kadai and grind fresh everyday 😮😮. It was a small grinder, quick and easy.

Nobody would ask ' tandaa or garam' to guests who visit home.   By default it would be filter coffee in the traditional Davara ( a small catori) and tumbler at any time of the day.

Mmmmm, those were the days of filter coffee, now getting diluted in 'latte and espresso'

Off I go to get a cup of hot coffee, of course FILTER COFFEE 😀😀

Anger and its Management

You may remind yourself a hundred times that you shouldn't get angry, but when the emotion comes, you are unable to control it. It comes like a thunderstorm. Emotions are much more powerful than your thoughts. What can you do when anger rises in you?
Anger is a distortion of your true nature and it doesn't allow the self to shine forth fully. The structure of human consciousness or the mind is very similar to that of an atom. The positively charged protons and neutrons are in the center of the atom while the negatively charged particles are only on the circumference. Similarly, even in human consciousness, mind and life, all the negativities and vices are only in the periphery. Your true nature is peace and love.
Showing anger itself is not wrong, but being unaware of your anger only hurts you. Sometimes you can show anger purposefully. For example, a mother gets angry at her children and can act tough or shout at them if she feels that they have put themselves in danger. There are situations that warrant showing anger, but when you get angry, have you observed what happens to you? You are shaken completely. Look at the consequences of getting angry. Are you happy with the decisions you have made or the words you have spoken in a state of anger? No, because you lose your total awareness. But if you are completely aware and are acting angry, that is fine and up to oneself to face the consequence.

Being in the Present Moment
All anger is about something which has already happened. Is it of any use getting angry about something which you cannot alter? The mind always oscillates between the past and the future. When the mind is in the past, it's angry about something that had already happened; but anger is meaningless as we can't alter the past. And when the mind is in the future, it's anxious about something that may or may not happen. When the mind is in the present moment, anxiousness and anger appear so meaningless.
Spiritual practices help you maintain your centeredness and not be shaken by small events. This is where a little knowledge about yourself, your mind, your consciousness and the root of distortion in our nature helps. It is when you are exhausted and stressed that you lose your nature and get angry. Every individual is bestowed with all the virtues in the world. They simply get covered-up by lack of understanding and stress. What is needed is just to uncover the virtues that are already there.

The Secret of the Breath
Breathing techniques and meditation are very effective in calming the mind. Learning something about our breath is very important. Our breath has a great lesson to teach us, which we have forgotten. For every rhythm in the mind, there is a corresponding rhythm in the breath and for every rhythm in the breath there is a corresponding emotion. So, when you cannot handle your mind directly, you can handle it through breath. Meditation is letting go of anger from the past and the events of the past. Meditation is accepting this moment and living every moment totally with depth. Often anger comes because you do not accept the present moment. Anger comes when one seeks too much of perfection. When you are joyful, you don't look for perfection. If you are always looking for perfection then you are not at the source of joy.
The world appears imperfect on the surface but, underneath, all is perfect. Perfection hides; imperfection shows off. The wise will not remain merely on the surface but will probe into the depth. Things are not blurred; your vision is blurred. Infinite actions prevail in the wholeness of consciousness, and yet the consciousness remains perfect, untouched. Realise this now and be natural.

is Homeopathy treatment the new " in thing " ?

As I was chit chatting with one of my friend who has allergic issues seasonwise, I was surprised at her recent interest in Homeopathy which she feels is healing her inside out.  Earlier, she used to talk about her regular anti histamine medicines and sometimes when allergy goes chronic, she would end with inhalation puffs and sometimes even nebulizer. Then, there was a period when she went into Ayurvedic drugs and now totally in Homeopathy.

Upon googling, there are many forums where most of them have vouched for the complete cure of their illness, be it allergy, arthritis or skin issues.  The treatment is simple with intake of pellets which in most cases do not have major reaction or side effects.   Of course, certain food restrictions needs to be followed while taking homeopathic medicines.

 In Bihar, where I was living when my kids were toddlers, I used to go to Homeopathy Dr there for cold and cough related ailments for my kids fearing the strong antibiotics of the hospitals.  Antibiotics used to have strong adverse reactions of loose motions, loss of appetite and sometimes even vomiting. On the contrary, a few pellets of Homeo medicine would give them relief of their cough and cold symptoms without any conta side effects.  But, in later life, I lost touch with homeopathy and allopathy took over the household.  Being married into a family of doctors,  was often ridiculed even to think of an alternate to allopathy 🙄🙄

Nowadays, I see Dr.Batra clinic advertisement in all the channels offering solutions to many ailments.

Homemade Pasta

Simple and easy to make pasta!!!!!!!!!






Ingredients:

All purpose flour 1 cup
Egg 1
Water 2 tbs
Salt 1/2 tsp

In a bowl combine the flour, water and salt. Then beat the egg and pour it in the mixture.  Knead the dough into a ball and keep it aside.

I use the Roma 6" Professional Grade Pasta machine to make Linguine and Fettuccine pasta.

Take the pasta machine and put some flour, flatten it up and put in through the different thickness and make the pasta.


Cooking pasta takes 2-3 min as it fresh. Now boil water put 1/4 tsp salt and add the pasta after it boils.Put the timer for cooking for 2 min. Strain the pasta and add it to the sauce. Pasta ready to eat.

Where does parenting end?????

This is a very thought provoking title and very sensitive too. I just returned to my place of residence after my second daughter's wedding. And when I met my friends here, the only question posed to me was that as both my children are married, and so now WHAT? I never had an answer for this question. But, this thought of raising children and letting them go and being empty handed now left me puzzled about life.Hence, thought of penning a few words on it.

" Parenting is the process of promoting and supporting the physical, emotional, social, and intellectual development of a child from infancy to adulthood. Parenting refers to the activity of raising a child rather than the biological relationship." - Wiki

The job of parenting begins as soon as the woman conceives. The announcement of the arrival, shopping for the baby, the planning as to who would be coming to help at the time of labor etc etc. When the D-day arrives, all hell break loose. All planning goes into doldrums. Path of life moulds and moves alongwith the moods of the baby including the daily routine of the parents. As the child grows, the individual man and woman begin to come together alongwith the child to become a family, Then on, their life starts centering around the child. It is a very busy cycle and the parents also grow up alongwith the child,  till they reach their mid 50's. This is the time when their children are either attending college or at work and mostly away from home

I ponder to myself as to how my parenting time went by. Sitting back and thinking hard, I am left with only a blank. No account at all of those days, as it just vanished in a jiffy, but I was busy nurturing them, thinking about their future and the day to day solutions, unforeseen problems etc etc. At the end of all these activities, all I could see were two grown up daughters who were ready to begin a life of their own.

As a parent, I feel content when I see them settling down with their respective spouses. I feel a sense of achievement having showed them the right path in life which has made them wonderful human beings. . When I hear them narrating some incidents of their daily life, I feel it is only a replay of mine. So, this is only a vicious circle which my mother would have felt when I left her and now I am feeling the same.

But, the duty does not end there. New relationships tag us along into a new circle of which we need to play our part. I wish to continue being a parent, may not be an active member in their day to day life, but be there whenever they want me.

Now, I have an answer to the question :):) This is a continuous process which originates when we give birth to them and that does not have an end.

Sabudana payasam

I just love making sweets and assorted desserts.  I made this on Chaturthi. It came out really well.




Ingredients:

1/2 cup sabudana pearls
2 cups milk
2 cups water
4 tbsp sugar
5 green cardamoms
3 tbsp cashew and raisins
Ghee

Soak the pearls for 1 hour. Rinse it in water and place it in a kadai.

Take little ghee roast the cashew and raisins and place it in a plate.

In the same ghee kadai, put the sabudana and fry for a minute. Cook till its transparent. After its cooked, pour milk and let it boil for a while.

Add sugar, raisins, cashew, cardamom powder and mix well.

Yummy payasam is ready to eat.

Pizza Yum yum !!!!!

I was just figuring out this morning what to cook for lunch, as kids were having unexpected school holiday.  My younger requested to  make pizza.   I was hunting for a good recipe for quite some time and finally  got a good one from Epicurious.com. It was Giada Delaurentiis recipe.  Came out really delicious and tasty:)))))



 
Ingredients:
 
3/4 cup warm water
1 quick acting yeast
2 cups all purpose flour
1 tsp sugar
3/4 tsp salt
3 tablespoon olive oil


Take 3/4 cup of warm water and pour the yeast in it and set aside for 5 min.
Mix the flour, yeast, sugar, salt and olive oil and knead it. I used the kneader in the kitchen aid and made the dough.

Once its done,  take a big bowl and apply olive oil.  Put the dough in that to rest and keep in a warm place. I placed it in the oven for an hour. If the oven is cold pre heat for 170F for a few minutes till the oven is warm and then place it in the oven. It will double itself.

After an hour take the dough out and punch it and place it on the glass board .

Divide the dough in 4 parts.  Take one part,  stretch it and place it on the baking dish.

Next put the homemade marinara sauce, Parmesan, Mozzarella cheese (I got the one from Wegmen the microbial Antonio's mozzarella) and broccoli. Place it in the oven for 15 min at 450F.
