Valentine Special-Lemon raisin cup cake with lemon cream cheese frosting


Sincere apologies for the long slumber. Anyways, making it up by posting this awesome cup cake recipe of my younger daughter who made this for her valentine :):)

The below quantity of ingredients would yield 40 to 45 cup cakes.

Ingredients for the cup cake:

All purpose flour -1 1/4 cups
Self-raising flour - 1 1/2 cups
Eggs - 4 (at room temperature)
Unsalted butter - 2 sticks (at room temperature)
Sugar - 2 cups
Vanilla extract- 1 tsp
Milk - 1 cup
Lemon juice - (1 lemon)
Lemon zest - (2 lemons)


Ingredients for the frosting:

Creamcheese - 4 ounces
Butter - 2 tbsp
Icing sugar - 2 cups
Lemon juice ( 1 lemon)
Lemon zest (1 lemon)
Pre-heat oven to 350 deg.

Line muffin pan with cup cake liners.

In a bowl, combine the flours and set aside.

In another bowl, cream the butter until smooth. Add the sugar gradually and beat until soft and fluffy. Now, keep adding eggs one by one, beating well after each addition. Now, add the flour mixture in three parts alternating with milk. Do not over beat. Add the vanilla extract and mix well. Add the lime juice and the lime zest. Once the ingredients are blended, carefully spoon about 3/4th of the cup cake liners. Bake for 20 to 25 minutes.

Cool the cup cakes well before starting the icing process. Even if a little heat is there, the icing would not set and will begin to melt. Hence, complete cooling of the cake is necessary.

For the frosting:

Beat the cream cheese and butter until light and fluffy.  Add the lemon juice, zest of lemon, sugar and beat it again.

Please note that the above ingredients should be at room temperature.
Added red edible sparkles just for my valentine :):)

Verdict: Awesome, awesome and just awesome !!!!!!!!!!!!!!!!!! A true feast to the eyes and the tummy :):)

  12. thanks for ur comment.U keep the lemon pieces with salt in a vessel for 6-7 days and keep shaking it and turning with a spoon.It becomes soft by the 8th day to make pickle.

    cupcake looks lovely..wenever imake cupcAKE, my papercases fades out to brown by the time muffins are cookes..even within 15minutes under 160degrees..any idea abt the reason?

      Thanks for visiting our blog again. I have personally never experienced my paper cases getting brow. Could you check if there is grease on the muffin tin that you are baking in? I read that it could cause the paper cases to turn brown.
