Pineapple Rava Kesari

Ingredients: Rava or Semolina - 1 cup 
Pineapple - 1/2 cup chopped pieces 
Sugar - 2 cups 
Water - 3 cups 
Ghee - 1/2 cup 
Cashew nuts - 12 
Orange food colour - a pinch 
Raisins - 15 
Cardamom - 4 pods powdered. 
 
In a thick bottom pan, add a tablespoon of ghee and fry the split cashews and transfer to a small dish. Then, add one more tablespoon of ghee and roast the rava in medium flame, till it turns light brown in colour and keep it aside. Pour three cups of water in the same pan and add the food colour. Once the water has come to a boil, simmer the heat to the lowest. Then, add the roasted rava and the pineapple pieces slowly, stirring it continuously so as to not form lumps. When there are no lumps in the mix, close with a lid and keep for two minutes and allow the rava and the pineapple to cook well in water. Open the lid and check if it is cooked. Then, add sugar and keep stirring. When the sugar is absorbed well and the kesari becomes thick, add the remaining ghee, little at a time and keep stirring. Kesari is done when it leaves the pan. Garnish with Cashewnuts, raisins (I like to add it without frying in ghee) and cardamom powder.
An easy and tasty sweet to prepare within 15 minutes. The pineapple added to it gives out a special taste.

Authentic street side Pav Baji

 

This is, by far the best pav bhaji recipe and is a super duper hit all the time.

Ingredients:

Boiled potatoes  - 5 

Onions - 2

Cilantro

Bell pepper - 1 count

MDH Pav baji masala - 1tsp

Turmeric - 1/8 tsp

Ginger and garlic paste - 1 tsp

Tomatoes - 3 nos

Butter 2 tbsp

In a pan, add a  tsp oil and a tbsp butter . Add ginger and garlic paste. Once done add onions. Then add turmeric and let onions gets cooked. Next add chopped bell peppers and tomatoes and let it cook. Finally add pan baji masala and salt. Once oil oozes out,  add the potatoes and mash it. Please add a cup of water. It should semi- solid. Let it cook.  In another pan, add red chili, lemon juice and add it in the baji. Add the test of the butter and little sugar. Enjoy your side with Pav buns and when you serve the baji add lemon and chopped onions on the top. YUM YUM!!!!


Indian style Pizza

A long hiatus indeed due to new arrivals in the family .  Corona and work from home has created a need to satisfy the family with restaurant style food. 

I prepared Indian style desi flavoured pizza for my kids. They loved it.


Ingredients 


All purpose flour - 4 cups
Sugar - 1 Tsp
Instant dry yeast - 1 envelope 
Salt - 2 Tsp
1 1/2 cups of water (110 degrees F)
Oil - 2 Tbsp


In a mixer bowl, combine flour, sugar, yeast, salt, oil and water. Mix well.


Grease a glass bowl with 2 tsp of olive oil and place the dough in the bowl. Cover it with a cloth and place it in the oven. Oven should be warm enough and this will help the dough to raise. Keep the oven light on throughout this process. Let it double in size, in one hour.

Pizza dough 
1/2 cup yogurt
1/2 Tsp turmeric
1/2 Tsp cumin and coriander powder - Depending on the spice level
1/2 Tsp garam masala
1/4 Tsp red chili (Kashmiri powder)
1/2 Tsp ginger and garlic paste
1/4 Tsp salt
1/4 Tsp lemon juice

Vegetables (chopped into small pieces)
Bell peppers - 3 colors chopped 
Pineapple - 1/4 cup 
Onion - 1 
Paneer 1 small box (8 OZ)
Oil - 1tsp
Kasuri methi - 1 tsp


Take a big glass bowl add yogurt then ginger garlic paste, coriander, cumin powder, turmeric powder, red chili, lemon and garam masala and salt. Mix them. Once mixed add all the vegetables. Mix them together in the bowl and cover and keep it in refrigerator for 2 hours. Once done take the dough split it in to two and half and roll the dough and place it on the pizza pan. Spread the pizza sauce and then put the marinated vegetables on the dough and add mozzarella cheese and place it in the oven for 400 degrees F for 15- 20 min.
