Once onion is cooked then add vegetables and Italian seasoning, salt and pepper.</div><div><br /></div><div>Once cooked , put it aside. boil the shell pasta and once cooked, put it in the cold water.</div><div><br /></div><div>Mix the vegetables and ricotta cheese stuff them in the shells. </div><div><br /></div><div>Take a deep brownie pan and spread a bottle of marinara sauce and then place the stuffed shells and put the mozzarella on top of it and bake it for 15- 20 min at 375. Ingredients:
Rava or Semolina - 1 cup <div>Pineapple - 1/2 cup chopped pieces </div><div>Sugar - 2 cups </div><div>Water - 3 cups </div><div>Ghee - 1/2 cup </div><div>Cashew nuts - 12 </div><div>Orange food colour - a pinch </div><div>Raisins - 15 </div><div>Cardamom - 4 pods powdered. <div>
<div style="text-align: justify;">In a thick bottom pan, add a tablespoon of ghee and fry the split cashews and transfer to a small dish. Then, add one more tablespoon of ghee and roast the rava in medium flame, till it turns light brown in colour and keep it aside. Pour three cups of water in the same pan and add the food colour. Once the water has come to a boil, simmer the heat to the lowest. Then, add the roasted rava and the pineapple pieces slowly, stirring it continuously so as to not form lumps. When there are no lumps in the mix, close with a lid and keep for two minutes and allow the rava and the pineapple to cook well in water. Open the lid and check if it is cooked. Then, add sugar and keep stirring. When the sugar is absorbed well and the kesari becomes thick, add the remaining ghee, little at a time and keep stirring. Kesari is done when it leaves the pan. Garnish with Cashewnuts, raisins (I like to add it without frying in ghee) and cardamom powder.

Once oil oozes out, add the potatoes and mash it. Please add a cup of water. It should semi- solid. Let it cook. In another pan, add red chili, lemon juice and add it in the baji. Add the test of the butter and little sugar. Enjoy your side with Pav buns and when you serve the baji add lemon and chopped onions on the top. <b>Ingredients for the frosting:</b><br />

Creamcheese - 4 ounces<br />
Butter - 2 tbsp<br />
Icing sugar - 2 cups<br />
Lemon juice ( 1 lemon)<br />
Lemon zest (1 lemon)<br />
Pre-heat oven to 350 deg.<br />

Line muffin pan with cup cake liners.<br />

In a bowl, combine the flours and set aside.<br />

In another bowl, cream the butter until smooth. Add the sugar gradually
and beat until soft and fluffy. Now, keep adding eggs one by one,
beating well after each addition. Now, add the flour mixture in three
parts alternating with milk. Do not over beat. Add the vanilla extract
and mix well. Add the lime juice and the lime zest. Once the ingredients are blended, carefully spoon about
3/4th of the cup cake liners. Bake for 20 to 25 minutes.</div>

Cool the cup cakes well before starting the icing process. Even if a
little heat is there, the icing would not set and will begin to melt.
Hence, complete cooling of the cake is necessary.<br />
<br />
<b>For the frosting: </b><br />
<br />
Beat the cream cheese and butter until light and fluffy. Add the lemon juice, zest of lemon, sugar and beat it again.<br />
<br />
Please note that the above ingredients should be at room temperature.<br />

Preheat the oven to 375 deg F<br />

<strong><u>Preparation of Muffins</u></strong>: Mix the flour,sugar and baking powder. Pour the vegetable oil to a measuring container which can hold one cup quantity. To this add the egg, vanilla essence, and the milk till it measures one full cup. Combine this to the flour sugar mixture. Fold in the blueberries. Grease the muffin tray and fill to 3/4th of the height to leave some space for the crumbs and also for the muffin to rise.</div>

<u><strong>Preparation of Crumb topping</strong></u>: Mix together 1/2 cup of sugar, 1/3 cup of all purpose flour, 1/4 cup of butter and 1 1/2 tsp of ground cinnamon and sprinkle this mixture over the muffins before baking.<br />

It usually begins with a warm up of just running across the length of the streets (mind you, there was not much traffic in the sub-streets). The game selection depends on the season too. Be it cricket, Gilli-danda, Pambaram or the top, Hide and seek, 7 stones, Pallankuzhi, Snakes & Ladders, Ludo, Carrom board, Making boats during monsoon etc etc. The list is endless.</div>

We had to very very careful during the play of some games like "Gilli danda" and cricket as we have broken many a panes and reprimanded severely sometimes. Teams for cricket are divided according to the capacity of each player. Three sticks would serve as stumps and a carved bat of wood with tennis ball would complete the cricket kit. </div>

"Pambaram" or the "Spin Top" was one of my favourite and those lovely colorful tops of wood bought from the Corner shop used to be real fun. The top comes with a long thread which is wound on the grooves and then pulled with a jerk and tossed on the ground. The top keeps spinning for a long time and the one which does for a long time emerges a clear winner. Again, we used to spin the tops in the middle of our palm too. </div>

During the game of Hide and Seek we can see the most of the girls hiding behind the huge trees or behind the compound wall but the boys invariably will be on the tree top hiding behind the lush green branches or sometimes on the house top. Making boats out of newspapers and making them float on the channelised rain water on either side of the streets is fun. </div>

Snakes and Ladders used to be a favourite during the Vaikuntha Ekadasi day when the local daily used to give a free supplement of the game alongwith the paper. We used to be awake the whole night playing and visit the nearby temple's 'Sorga vaasal' (Gate to Heaven) the next morning. The spirit and the excitement were abundant.</div>

The games used to extend till the daylight fades and each one gets a call from their mothers to get inside the house. The end of play is mostly determined by the switching on of street lights. Although we used to play for long hours, still we used to sulk while returning back home and would not disperse till we decide the game plan for the next day.</div>

Once home, after a quick bath, still there was enough time to do our daily studies before a sumptuous simple home cooked dinner. </div>

If at all, time is available, can see them either with their parents mobile, playing games or sitting in front of the television. No doubt, competition has become multi fold nowadays, but still the childhood should not be lost. </div>

In a big sauce pan, melt some butter but don't let it brown. Add the flour and cook for a min or two in low heat, make sure the raw smell disappears, but be careful not to burn it. In a separate pan, add little butter and saute the onions till it is translucent. add the carrots, beans and cauliflower and cook it. smash it lightly and add it to the butter and all purpose flour mixture. Add milk, salt and bring it to a boil, the mixture will thicken and get to a creamy texture. Sprinkle some pepper and serve hot with some sour dough bread.</div>

Most of us would be aware that methi seeds are boon to mankind especially to diabetic people. A spoon of methi soaked in water the previous night and taken as a first intake the next morning would do wonders to blood sugar. If taken dedicatedly, result can be seen within a few weeks.<br />

I have been sprouting methi for quite sometime. Along with my usual salad, I mix a tablespoon of methi sprout which makes my salad double healthy. <br />

Wash methi seeds well and soak them for 9-10 hours. Drain and keep the seeds in a colander and let the excess water drip out. This will take anywhere between half to an hour, depending on where you place the colander. If it is placed close the window, the water dries up quickly. Take the moist methi seeds in a big square cloth ( I use handkerchief) and tie it well - well covered on all sides and keep it in a corner. After 24-36 hours, sprouts can be seen and you can decide the length of the sprout.<br />

Born and brought up in Mylapore, Chennai, a hot cup of filter coffee is an integral part of our daily life. My mother prepares the excellent coffee with the first thick decoction from the traditional coffee filter. Everything is prepared fresh in the morning. The first aroma of the boiling water getting mixed with the coffee powder in the coffee filter is divine and can be smelt a couple of houses away. Fresh milk (not Aavin) used to be brought to the door step by the milk man as early as 5 a.m. Hence, the first coffee of the morning is so special with fresh milk and fresh decoction. Later, during the day, it gets diluted and depends on visitors too 😜😜.<br />

Once in three days, coffee powder is bought from Narasus who freshly grind 'Pea berry and Plantation 'A' in certain proportions as desired by customers. The proportion of these berries are very important to get the authentic rich flavor. Sometimes a little chicory is added to give thickness. Not to forget those days, when we used to buy raw coffee beans, roast in Kadai and grind fresh everyday 😮😮. It was a small grinder, quick and easy.<br />

Nobody would ask ' tandaa or garam' to guests who visit home. By default it would be filter coffee in the traditional Davara ( a small catori) and tumbler at any time of the day.<br />

Mmmmm, those were the days of filter coffee, now getting diluted in 'latte and espresso'<br />

As I was chit chatting with one of my friend who has allergic issues seasonwise, I was surprised at her recent interest in Homeopathy which she feels is healing her inside out. Earlier, she used to talk about her regular anti histamine medicines and sometimes when allergy goes chronic, she would end with inhalation puffs and sometimes even nebulizer. Then, there was a period when she went into Ayurvedic drugs and now totally in Homeopathy.<br />

The treatment is simple with intake of pellets which in most cases do not have major reaction or side effects. In Bihar, where I was living when my kids were toddlers, I used to go to Homeopathy Dr there for cold and cough related ailments for my kids fearing the strong antibiotics of the hospitals. This is a very thought provoking title and very sensitive too. I just returned to my place of residence after my second daughter's wedding. And when I met my friends here, the only question posed to me was that as both my children are married, and so now WHAT? I never had an answer for this question. But, this thought of raising children and letting them go and being empty handed now left me puzzled about life.Hence, thought of penning a few words on it. <br />

" Parenting is the process of promoting and supporting the physical, emotional, social, and intellectual development of a child from infancy to adulthood. Parenting refers to the activity of raising a child rather than the biological relationship." - Wiki<br />
<br />
The job of parenting begins as soon as the woman conceives. The announcement of the arrival, shopping for the baby, the planning as to who would be coming to help at the time of labor etc etc. When the D-day arrives, all hell break loose. All planning goes into doldrums. Path of life moulds and moves alongwith the moods of the baby including the daily routine of the parents. As the child grows, the individual man and woman begin to come together alongwith the child to become a family, Then on, their life starts centering around the child. It is a very busy cycle and the parents also grow up alongwith the child, till they reach their mid 50's. This is the time when their children are either attending college or at work and mostly away from home <br />
<br />
I ponder to myself as to how my parenting time went by. Sitting back and thinking hard, I am left with only a blank. No account at all of those days, as it just vanished in a jiffy, but I was busy nurturing them, thinking about their future and the day to day solutions, unforeseen problems etc etc. At the end of all these activities, all I could see were two grown up daughters who were ready to begin a life of their own. <br />
<br />
As a parent, I feel content when I see them settling down with their respective spouses. I feel a sense of achievement having showed them the right path in life which has made them wonderful human beings. . When I hear them narrating some incidents of their daily life, I feel it is only a replay of mine. So, this is only a vicious circle which my mother would have felt when I left her and now I am feeling the same. <br />
<br />
But, the duty does not end there. New relationships tag us along into a new circle of which we need to play our part. I wish to continue being a parent, may not be an active member in their day to day life, but be there whenever they want me.<br />
<br />
Now, I have an answer to the question :):) This is a continuous process which originates when we give birth to them and that does not have an end.</div>

1/2 cup sabudana pearls<br />
2 cups milk<br />
2 cups water<br />
4 tbsp sugar<br />
5 green cardamoms<br />
3 tbsp cashew and raisins<br />
Ghee<br />
<br />
Soak the pearls for 1 hour. Rinse it in water and place it in a kadai.<br />
<br />
Take little ghee roast the cashew and raisins and place it in a plate.<br />
<br />
In the same ghee kadai, put the sabudana and fry for a minute. Cook till its transparent. After its cooked, pour milk and let it boil for a while.<br />
<br />
Add sugar, raisins, cashew, cardamom powder and mix well.<br />
<br />
Yummy payasam is ready to eat.</div>

3/4 cup warm water<br />
1 quick acting yeast<br />
2 cups all purpose flour<br />
1 tsp sugar<br />
3/4 tsp salt<br />
3 tablespoon olive oil<br />

Take 3/4 cup of warm water and pour the yeast in it and set aside for 5 min.<br />
Mix the flour, yeast, sugar, salt and olive oil and knead it. I used the kneader in the kitchen aid and made the dough. <br />
<br />
Once its done, take a big bowl and apply olive oil. Put the dough in that to rest and keep in a warm place. I placed it in the oven for an hour. If the oven is cold pre heat for 170F for a few minutes till the oven is warm and then place it in the oven. It will double itself.<br />
<br />
After an hour take the dough out and punch it and place it on the glass board .<br />
<br />
Divide the dough in 4 parts. Take one part, stretch it and place it on the baking dish.<br />

<strong><em>I had posted this way back in 27/12/2009. Just to keep you all updated on my friend Kamala - I had helped her set up a small business of masalas hygienically prepared at home to cater to the local crowd. She began only with a couple of streets in the vicinity but slowly expanded to the whole area and was constantly pressurized to supply to the neighborhood too. She has employed friends to help her out with washing, drying and grinding the necessary spices in the mill nearby. She did not have the courage to expand her set up. </em></strong><strong><em>I counselled her to expand and even initiated with the distribution of flyers about her supplies. </em></strong><strong><em>This time, when I met her, I could see a beaming girl, very cheerful and full of confidence. Her sons have grown up and occasionally helping her. Academically too, they are doing very well. Really proud of her for having fought the odds to create a niche for herself. Hope her story inspires many more 'Kamalas' in our country who are still trying to fight out.</em></strong></div>

Acquaintance with Kamala is only two months old. I had been to my hometown for the preparation of an upcoming wedding in the family. Visiting my hometown after a span of six months required a lot of cleaning and setting up the house. Now, since there was a wedding coming up, this needed much more than the usual. Usually, I get someone or the other to help me out. This time even after a couple of days of landing, there was no one in sight. I tried all my resources but of no use. </div>

Then there was the doorbell. When I opened, I saw a beautiful woman in her late twenties dressed in a synthetic sari with simple jewels in her ears and neck. There was this anklet full of gungroos which caught my attention. The look on my face posed enough questions which brought me answers from her. She is a part time maid who had heard from someone that I am in need of someone to help me out. When asked about the salary structure, she would not speak about it and left to my discretion to decide. She had already decided to work for me. </div>

She had passed her tenth standard, married with two sons studying in local school. Her husband is related to her and working as a carpenter. She is the eldest of three daughters and very dear to her father. Her father was not happy that she started working as domestic help, but the financial condition in the house did not allow her to sit at home. She was already working in two houses and assured she would find time to squeeze to help me with the daily chores. </div>

I started waiting for her everyday as she was very good in her work and apart from work, she used to give me ideas of re-arranging the house. She updated about the latest exhibition going on at halls near our house where I could find good decorative items for the home. Sometimes, she used to accompany me too. Also, she would not just finish the regular chores but would extend helping hand to mine too. Slowly, I started to realise that we have developed a beautiful relationship. </div>

When talking about her family, she would always speak high of her husband and children. I was happy for her. </div>

She was a great support at the wedding and like a family member she was there always ready to lend a helping hand. Suddenly, I could no longer see the smile in her face. When enquired, she told she was feeling sad that I would be leaving. Within a few days, she brought the house back to normalcy. </div>

When asked numerous times, she finally told that her husband had not come for almost a week as they had a big fight over some petty issues. The next morning, as I was getting ready to leave, I heard the doorbell and saw Kamala there. I understood that she had cried all night as her eyes were red and lacked sleep. She wanted to speak to me for sometime, she said. She spoke and spoke for half hour. Then, I knew that her life was not a bed of roses as I thought. She hid all her suffering with her ever beautiful smile and not let out her feelings or expected any sympathy. From her dialogue, I figured out that her husband was not going to return to her. I had already planned that during my next visit, would help her to set up a small simple business at home which would give her extra income and also boost up her spirits as I know that she would never take money from me even as loan. </div>

I left India with a heavy heart and continue my prayers that Kamala becomes strong enough to face the long future in front of her but at the same time appreciating her self esteem and dignity of not disclosing her true life status or to take undue advantage of the situation. This is a comfort food and am sure will be enjoyed by all. This goes very well as a main component with rice or as an accompaniment with sambar rice. Enjoyed by one and all as a side dish for rotis or chappathis. It is good to have spinach daily to have healthy hemoglobin level. There are many interesting recipes with spinach and the below mentioned is one of the tastiest.<br />

Ingredients:<br />

Spinach (Palak) 2 bunches<br />
Tuvar dal - 1 cup cooked<br />
Turmeric powder - 1/4 tsp<br />
Tomato - 1 big finely chopped<br />
Jeera - 1/2 tsp<br />
Red chillies (whole) - 2 to 3<br />
Mustard seeds - 1/2 tsp<br />
Urad dal - 1/2 tsp<br />
Hing - a pinch<br />

REmove stems from palak and wash the leaves well under running water. Once washed well, boil it with salt and turmeric powder. Once cooked, mash it coarsely and keep aside. In a small kadai, pour two tablespoon of oil, add mustard seeds. When it splutters, add jeera, hing and the red chillies. Now, add the finely chopped tomatoes and cook it till it leaves oil on the sides of the kadai. <br />

Add the cooked tuvar dal to the coarsely ground palak mix. Mix well and place the vessel in low heat. Let it boil. Once the heat is turned off, mix the tomato and stir.<br />

Yummy dal palak is ready to devour.</div>

Nobody can ever say NO to the humble samosa. Be it the simple potato or the multiple veggies or the non vegetarian filling, this has its own space in the cooking domain. As such, there is no standard recipe or measurement for this filling. No two samosas tastes alike. A little tweak with the masalas or veggies bings about a new flavour and an altogethere new taste.</div>

Here, I pen down my version of samosa which is always a hit with my family and friends.<br />

Ingredients:<br />

All purpose flour<br />
Potatoes - 2 to 3 big<br />
Carrots - 1 medium size<br />
String beans - few<br />
Peas<br />
Green chillies - according to taste<br />
Turmeric powder - 1/4 tsp<br />
Red chilly powder - 1/2 tsp<br />
Coriander powder - 1/2 tsp<br />
Coriander leaves 1/4 cup finely chopped<br />
Salt to taste<br />
Oil for frying<br />

Prepare a nice dough with all purpose flour adding little salt to it. Keep it aside<br />

Boil potatoes and mash well. Finely chop carrots, beans, peas and boil with some salt. Now in a bowl, add the mashed potatoes, cooked carrots peas and beans. Add some salt to this mix, be careful while adding it as salt has also been added to the veggies while cooking.. In a small pan, heat a little oil and add turmeric, red chilly powder and coriander powder. Ensure, the powders retain the original color. Once they are blended in oil, remove pan from fire and pour the contents to the mashed mix of potatoes and veggies. Now add the finely chopped coriander leaves and mix well. Check for taste.</div>

Make small balls of the dough. Keep the filling and fold and make a triangle shaped pocket. My pics above would give you an idea. Once the samosas are prepared, deep fry in oil and let it cook on all sides. It is better to prepare samosas simultaneously and fry them immediately.<br />

The end product goes well with ketchup, tomato sauce, chilly sauce, coriander chutney.<br />

The first five years of marriage flies away in adjustments and learning new things. The next twenty years, one is very very busy with the family, children and job (if the lady is working). By the time one realises how far she has travelled during the years, almost half of one's life has disappeared. </div>

If one realises the intensity of the above words, less would be enmity and greediness. If the essence of Gita is thoroughly understood, one would not become materialistically attached to worldly things, which are just temporary.</div>
